I love trying new recipes.  The down side of that is that we hardly ever have the same meal twice!  I just feel like there is so much good food out there, I want to try everything I can!

We had this salad with our Christmas dinner, and it was so good!  I wanted something light and different, and this fit both categories!  This will be perfect in lunches this week as well!

Sweet Potato and Pineapple Salad

Makes 8 servings

Salad:

3 large sweet potatoes, peeled and chopped

1 tbsp extra virgin olive oil

salt/pepper

1 large red bell pepper, seeded and diced

1 large yellow bell pepper, seeded and diced

1 fresh pineapple, chopped (or one can pineapple chunks, drained)

4 scallions, chopped

1/3 cup fresh parsley, chopped

Dressing:

2 tbsp apple cider vinegar

2 tbsp brown sugar

1/3 cup orange juice, or 1 orange, juiced

1 tbsp stone ground mustard

2 tbsp extra virgin olive oil

Preheat oven to 400 degrees.  Peel and dice potatoes.  Place on a baking sheet.  Drizzle 1 tbsp olive oil over potatoes, and season with salt and pepper.  Massage the potatoes with the oil to evenly coat.  Roast potatoes for 30 min – 45 minutes, or until they are fork tender.

Cut the peel off the pineapple, and cut around the core.  Chop into pineapple chunks.

In a large bowl, combine the roasted potatoes, the red and yellow bell peppers, pineapple chunks, scallion pieces, and the chopped parsley.  Mix well.

Combine all the dressing ingredients and mix well.  Pour over the salad and stir well.  Server immediately, or place in the fridge until you are ready to serve it.

This is good hot or cold!

The whole pineapple yielded about 4 cups of pineapple chunks.  You really only need about half of that – but there is nothing like fresh pineapple!  I added all of it to this salad.  I think the sweet potato and pineapple perfectly compliment each other!

Yum!  I was going to add some feta cheese to this, but forgot!  Good thing I have leftovers!
