MOTR’s Top 10 Zucchini Recipes

I shed a little tear this morning because I used the last of my fresh zucchini. It appears my little plant has given me his yield for the summer. So sad!! I was beginning to love my daily dose of the green giant. Why do I love zucchini so much? Zucchini is very low calorie vegetable. Zucchinis provide only 17 calories per 100 g. Contains no saturated fats or cholesterol. Its peel is good source of dietary fiber that helps reduce constipation and offers some protection against colon cancers. In honor of my last garden zucchini I am giving you Mom on the Runs Top 10 Zucchini madness recipes.

The recipes are in no particular order and have all been tried and approved in the MOTR kitchen. I have indicated which are Gluten Free (GF) or Dairy Free (DF) for those with food restrictions.

1. Summer Squash, Zucchini, and Chicken Lasagna (GF)- A great blend of ingredients to make a cheesy noodle delight the whole family will enjoy. This recipe is original from Sarah @ The Pajama Chef.

2. Zucchini Fritters (GF and DF)- This recipe is great for both breakfast or lunch. Serve piping hot for the best flavors and crunch.

3. Chicken and Summer Vegetable Tostadas (GF and DF)- This is a Cooking Light original that I re-worked to make it meet the MOTR dietary needs. The blend of chicken, vegetables, and spices are amazing. I love open face dishes like this.

4. Gluten Free Banana Zucchini Chocolate Chip Muffins- Chocolate chips and zucchini- Enough Said!

5. Jambalaya-Stuffed Zucchini- This recipe incorporated my 3 proteins of choice chicken, shrimp, and sausage. Of course I had to modify it a bit to suit the Mom on the Run household dietary needs (Dairy, Soy, and Gluten Free) but it did not make this dish any less yummy. This easy to make dish will be a crowd pleaser for the whole family.

6. "Fried" Zucchini and Summer Squash Crinkle Fries- This is nice alternative if you are looking for a little crunch on the side of a great tasting burger.

7. Gluten Free Zucchini Brownies-These brownies are the same consistency of a brownie but taste richer. The zucchini adds something to them that makes them moist and delicious.

8. Firehouse Frito Pie- FRITOS and Zucchini!!!!!! Enough said Smile

9. White Wine Chicken and Vegetable Alfredo- Kids boycotting eating their veggies—This dish will solve all your problems.

10. Fresh from the kitchen….Healthy Zucchini Bites. This week I found this easy but tasty recipe from The Healthy Hostess and pinned it for use with the last of the zucchini. This morning I had an extra minute and whipped these up. So good and portable. Once I get some more zucchini I will be making more and storing them for future breakfasts.
