| Living the Life with a Crop of Zucchinis. Posted: 05 Aug 2012 12:17 PM PDT Wow! It has been a little bit since updating Mom on the Run but I have given most of my attention to my #1 job…..Mommyhood! I take this job very seriously and these three lovely ladies keep me very busy. Our lives are filled with lots of family time and creating new memories. After a long day of teaching and after school kid activities there is not much time for much else extra. I am loving the time I have been spending with the girls and their smiles and laughter are priceless memories. Being busy was only one reason why Mom on the Run was on hiatus. Blogging was also becoming a chore. When I first started blogging it was to share healthy family friendly recipes, which I LOVED to do. I then got caught up with giveaways, stats, and how many comments I could get in one day. Blogging was becoming a full time job and I did not want another one of those. So I am going back to my roots and sharing with you stories about my girls, recipes that get their A+ two thumbs rating, and products that we can't live without. Simple is the new Mom on the Run Motto! What really brought me back today was a great recipe that I created with the inspiration of my fantastic garden. Despite the heat waves and at times days without rain we are having a fantastic crop. Right now we have a plethora of the New England Green Giant…Zucchini. In the last week we have had over 10 sprout up. Now I love zucchini but the girls they will only eat it if hide it in something. Mexican dishes are my favorite thing to hide it in but I wanted to create something a little different. Bring on the Zucchini Fritter. My girls love food that is crispy and salty….think carnival food (what kid doesn't). I combined there love for a fried piece of dough for a lightly fried vegetables. It was a kid pleaser! There are a lot of different versions of this dish but this is my twist. Zucchini Fritters Created by: Mom on the Run I created this to be both gluten and dairy free. Feel free to make adjustments to meet your family's dietary needs. Ingredients: 2 cups shredded dried zucchini 1/4 cup onions chopped finely 1/2 cup gluten free flour 1 egg 1 tsp oregano 1 tsp Cajun Seasoning (gives it a little kick) 1/2 teaspoon sea salt 1/2 teaspoon fresh ground pepper 1/4 vegetable oil (for pan frying) DIRECTIONS: 1. Grate the zucchini. I used my food processor grater attachment to lessen the work load. If you need a work out you can can use a hand grater and have a shredding party. Important Next Step if you do not want soggy fritters. Make sure to draw the moisture out of the zucchini. I do this buy using a clean kitchen towel to ring the moisture out of the zucchini. I gently pat and squeeze the zucchini out using the towel.
2 Place dried zucchini to the bowl and onion, oregano, cajun spice, egg, and flour. Gently mix all of the ingredients together. 3. Heat the oil in your pan and then drop spoonfuls of the mixture in to the heated oil (about a tablespoon or so each). Flatten each with a spatula, cook about 3-4 minutes per each side, until golden brown. Drain on paper towels and season with salt, to taste. Yummy Yum Yum! If I had more than two thumbs they would be raised as well. This recipe is a summer keeper. Using up fresh produce for tasty family friendly treats is exactly what the Mom on the Run kitchen is all about. Until the next tasty treat…. |
