It is that time of year. Yes-Back to School outfits have been purchased and supplies (at least the ones we know about) are in the respective back packs already. Nothing like being prepared. Now if I can get my own butt in gear. It has been a rough week of getting up with the sound of the blaring bedside alarm. I am glad I get a "preview" week by myself and then next week I can add the girls into the routine.

Besides going back to school we have also started back up with nightly soccer practices.  Night time activities means easy to prepare dinner. Meatloaf is one of my go to quick meals that I know I can make and the whole family enjoys. I use my handy muffin tins to shortened cooking time. The muffin tins also help with portion size and are so easy to freeze. My girls like it because it is kid-sized.

Here's the tasty recipe to make for your family on those busy nights. This is one of those recipes you can make on a Sunday night and freeze for later in the week. I made extra myself to make my own "Lean Cuisine" dinners. Nutritious and Delicious!

Mom on the Run's Meaty Muffin Meatloaf

Ingredients:

  • 1/2 pound lean ground beef
  • 1/2 pound ground pork
  • 1 pound fresh Italian Sausage, casings removed
  • 3 tbsp Gluten Free Bread Crumbs
  • 1 egg
  • 1/2 cup of finely chopped onion
  • 2 tsp dried oregano
  • 1 tbsp Worchester sauce
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 4 oz crumbled feta
  • 1 cup prepared tomato sauce

Preparation

Preheat oven to 350 degrees. In a large bowl combines ground meats, bread crumbs, egg, onion, oregano, Worchester sauce, and salt and pepper. Combine ingredients until incorporated into each other. This can be a messy step so don't be afraid to use those hands.

Divide the beef mixture among the greased muffin cups, packing well and mounding slightly. Top each "muffin" with prepared tomato sauce and crumbled feta. Place the muffin pan on a baking sheet and bake until cooked through and browned on top, 40 minutes.

Paired with a little bit of gluten free pasta and vegetables this meatloaf is a wonderful quick weekday meal.

I do have one change for next time. I realized afterwards that I have a ton of fresh basil growing in my garden. It would have been a nice touch to make a tomato basil sauce to "glaze" each meatloaf with.  Maybe next week!
