Simple Chorizo Stuffed Summer Squash

Woooo-eeeee! It is a hot one out there. We have decided to take the family to the beach today Smile , so it's a short and simple post for you on this Steamy Thursday.

Chorizo Stuffed Summer Squash

Ingredients

  • 3 Yellow Squash, halved
  • 2 cups of cooked brown rice
  • 1/2 pound of ground chorizo removed from casing
  • salt and pepper
  • 1/2 cup of shredded cheddar cheese

Instructions:

Preheat oven to 350 degrees.

To prepare the squash cut each whole squash in half. Scoop seeds and insides out of each squash to make a boat. Sprinkle each half with salt and pepper. Bake squash in 12×9 casserole for 10 minutes or until squash boats become soft and tender to touch.

While squash is baking, begin browning chorizo. Caution: If you have never worked with chorizo be warned it cooks out a lot of fat. Be prepared to drain pan frequently.

When chorizo is browned add rice. I always have leftover brown rice from a Chinese Food take out. I decided to use that rice to add to my browned chorizo. The chorizo I used had so much flavor already in the meat that I did not need to add spices.

Scoop meat/rice mixture into each squash boat. Sprinkle with cheese and bake for 10 minutes or until cheese is melted. Simple and easy. A Mom on the Run Special……Enjoy!
