Daijia’s Dish: BBQ Sloppy Joes on Crunchy Garlic Bread

I love when I get help in the kitchen from my girls. Tonight’s guest chef in none other than my 0ldest, Daijia.

Daijia asked what I was making for dinner. When I told her Sloppy Joes and what it would taste like she came up with one of her more brilliant ideas. Daijia says, "Lets make the sloppy joe buns into garlic bread." Genius idea I shouted. Why Chef Daijia made this culinary flavor choice, "Because garlic bread makes everything taste better and the garlic bread makes the sloppy joe sauce even better.!" I think our kitchen talks are really paying off. Girl knows her flavor combinations. So here is the recipe we created just for you!

BBQ Sloppy Joe's on Crunchy Garlic Bread

Ingredients:

  • 1 tablespoon extra virgin olive oil (EVOO)
  • 2 pounds ground chicken
  • 1 cup of shredded summer squash
  • 1 medium onion, chopped
  • 1 small green bell pepper, seeded and chopped
  • 1 clove garlic, minced
  • 3 tablespoons red wine vinegar
  • 3 tablespoons dark brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 can tomato sauce (14 ounces)
  • 1 tablespoon hot sauce
  • 1 tablespoon butter
  • 1 tablespoon garlic powder,divided
  • 4 crusty rolls, split and toasted
  • 1/2 cup of shredded cheddar cheese

Preparation:

Place a large nonstick skillet over medium-high heat, then add the EVOO. Add the onion, summer squash, and peppers and cook 5-6 minutes to soften.

Add ground chicken to the pan and, using the back of a wooden spoon or spatula, break it up into crumbles so that it can brown evenly.

In a bowl, combine the vinegar, brown sugar, Worcestershire sauce, tomato sauce and hot sauce. Stir the BBQ Joe sauce into the chicken and combine. Reduce heat to simmer, let mixture bubble and then combine for 5 minutes more.

While meat mixture is simmering, butter each half of roll. Dust each roll with garlic powder. Toast buns for 3-4 minutes until browned.

Using a large spoon pile the sloppy chicken onto toasted bun bottoms. Top each half with cheese. Place buns under the broiler for 1 minute or until cheese is browned.

Serve and enjoy!

I made a double batch of meat to freeze for another night. The kids will be excited to see this dish again in September!
