Sunday Special: Grain/Dairy Free Zucchini Brownies

I love finding new recipes that I can make my own. If you have been reading my post for the last week you will know that I have become somewhat of a zucchini crazy. This is what happens when you go from nothing in your garden to more vegetables than you know what to do with. There is only so many stir fries and baked zucchini dishes a family can tolerate.

My girls love fresh made desert, especially brownies. I have heard of ways to "hide" vegetables in kid friendly deserts but honestly I do not need to worry about my kids and veggies. They love vegetables and do not give me a hard time about eating them. Currently, I can't keep my stock of cucumber "chips" (cucumbers with a little salt and pepper) to the demand of little hands. Let's hope that my garden can keep up with the demand.

Now back to brownies. Along with using up vegetables I am also looking for recipes that are both grain and dairy free. I find that my tummy does much better without wheat or dairy. I found a lot of zucchini brownie recipes in the blogosphere but none of them were a perfect fit. I took the basis of a few recipes and created my own version. These brownies are the same consistency of a brownie but taste richer. The zucchini adds something to them that makes them moist and delicious.

Gluten Free Zucchini Brownies

Ingredients:

  • 1 cup of creamy peanut butter
  • 1 1/2 cup chopped zucchini
  • 1/3 cup of raw honey
  • 1 egg
  • 1 tsp of vanilla
  • 1 tsp of baking soda
  • 1 tsp of unsweetened cocoa powder
  • 1/ 2 cup of dark chocolate chips

Directions:

Preheat oven to 350 degrees. Combine all the ingredients into a large bowl and mix everything together.

Pour into a greased 9×9 baking pan.

Bake for 35-45 minutes, or until a toothpick comes out clean.

Not a lot of ingredients or work for a great tasting treat. Leaving out typical ingredients does not mean you can't create your own new favorites. Enjoy!
