What is your favorite meal? I love breakfast, and all different kind of breakfast foods – sweet and savory! However, pancakes are a favorite.
I love buckwheat, and have been experimenting with different baked goods incorporating buckwheat for a while. However, I don't like the buckwheat flour you can buy pre-ground. To me, it tastes really bad – I can't even explain HOW it tastes, just blah. I prefer to buy the raw buckwheat "groats", and grind them myself in a coffee grinder. You can also buy the toasted "kasha" buckwheat groats, but I prefer the raw groats. Try it and see what you like!
Fermented Buckwheat Pancakes

Serves 3 (7-9 pancakes)
1 cup buckwheat flour, or raw buckwheat grouts, ground into flour
1 cup warm water
1 tsp active dry yeast
1 tsp sugar
2 large eggs
2 tbsp melted butter
1/4 tsp salt
The night before, place the buckwheat flour, water, yeast and sugar in a small bowl. Stir well. Cover, and let sit overnight.
In the morning, add the egg yolks butter, and salt to the batter.
In a separate bowl, using a hand held electric mixer, beat the egg whites into stiff peaks. Gently stir the egg whites into the rest of the batter.
Preheat a small skillet over medium heat. Bake the pancakes – about 1/4 cup batter at a time for about 2 minutes on each side. Place the cooked pancakes on a plate and continue cooking until all the batter is used up.
Serve!
I got about 9 pancakes of varying sizes from this recipe. Perfect for breakfast for the 2 of us, and some left over!
Last week, I saw this Chocolate Cookie Dip from Chocolate Covered Katie on Gina's blog. I have always been turned away by dessert hummus'. I don't know – hummus to me shouldn't be sweet. However, one taste of this and I was convinced! You should definitely try this – you cannot tell there are chickpeas in it! I think this would be good on just about anything – but perfect on pancakes!
Which just goes to show you --- what CAN'T you use beans in? ;)
Chocolate Chip Hummus Spread

1 1/2 cups cooked chickpeas
1/4 cup nut butter
1 cup dates (or prunes!) soaked in 1/2 cup water for 8 hours or overnight
1/3 cup mini chocolate chips
The night before you would like have this hummus, soak 1 cup dates in a medium bowl with 1/2 cup water. You can also use PRUNES! I did not have any dates, and used prunes and this turned out great!
In the morning, combine all ingredients in your food processor. Process until smooth. Add some milk or nondairy milk if needed to thin out the hummus.
Unbelievably good! Now I feel ready to face the rest of my day!
