I am so excited about this recipe!  Believe it or not, I had never had fondue before I made this.  However, I thought fondue would be something special to do for New Years!  It is turned out so delicious!  Seriously.

If I told you the secret ingredient was beans, would you believe me?

Secret Ingredient Fondue

Serves 12 (or so)

8 ounces gruyere cheese, shredded

8 ounces swiss cheese, shredded

1 tsp dijon mustard

1 cup white wine

1 – 15 ounce can cannelini (white kidney) beans, drained and rinsed

2 cloves garlic

1 tbsp lemon juice

In a food processor, process the beans, dijon mustard, 1 clove garlic (peeled), lemon juice, and 1/2 cup wine.  Process until smooth and creamy.

In a fondue pot, take the second clove of garlic and rub it all over the inside of the pot.

Turn on the fondue pot, and add the bean mixture.  Slowly, 1/4 cup at a time, add the shredded cheese.

When the cheese melts, add more cheese, and continue until all the cheese is melted.  Stir in the other 1/2 cup of wine.

Serve with your choice of items to dunk:  bread chunks, veggies, sliced apples, tortilla chips, or crackers.  You would never know there are beans in the fondue.

These are the Food Should Taste Good Sweet Potato tortilla chips!  These are so addictive by themselves, and especially in this fondue!  They are gluten free, and worked so well!

If you don't have a fondue pot, you can heat this on the stove, or even in a crock pot.
