This last weekend, I decided I wanted to recreate the sliders we had as appetizers for our wedding reception.  We each picked one appetizer --  since I didn't think I would get to eat them anyways (the appetizers were served when we were taking pictures) – I chose tomato, mozzarella, and basil canapés.  Those were really good!!  The hubby chose the beef and bacon sliders.  :)

I think I might have had one of the burgers at the wedding, but I really don't remember!

I decided to make the burgers on little biscuits, so that was my first challenge --  a gluten free biscuit!

Gluten Free Buttermilk Biscuits

3/4 cup garbanzo bean flour

3/4 cup potato starch

1/2 cup quinoa flour

1 tsp xanthan gum

1 tbsp baking powder

1/2 tsp baking soda

2 tbsp sugar

1/2 tsp salt

1/2 cup butter, cubed

1 cup buttermilk

In a medium bowl, mix together the flours, starch, xanthan gum, baking powder, baking soda, sugar and salt.  Mix together.

Cut the butter in cubes, and with a pastry butter, break the butter into small pieces and mix into the flour. You can also use 2 forks, a potato masher, anything that will break up the butter!

Add the buttermilk and mix with a spoon until combined.

Wrap the dough in plastic wrap, and place in the fridge for 30 minutes.

Preheat the oven to 450.  Dust your work space well with extra garbanzo bean flour.  Roll the dough out about 3/4 – 1 inch thick.  The thicker the dough – the thicker the biscuits will be!

Cut out with a biscuit cutter --  I used a 3 inch biscuit cutter because I wanted mine to be small.

Bake for 8-15 minutes, or until lightly golden brown.  Cool on a baking rack.  If you want a bigger biscuit, you will need to cook them longer.  Mine cooked for 8 minutes and were perfect.

Makes 20 small (3 inch diameter) biscuits

For the burgers, all I remember from the wedding is that they were called "Beef and Bacon Burgers".  My husband says he remembers bacon strips on top of the burgers, but that can get messy, especially when the burgers are small!  You know, you bit into the burger, the bacon crumbles in pieces, falls off, you have to put it back on …  messy!!  I decided to do bacon INSIDE the burgers!

Bacon in Beef Burgers

Makes 24 small burgers

2 1/4 pounds ground beef

4 strips bacon

salt and pepper

Cook the bacon until crispy on a medium skillet over medium high heat.  You want the bacon to be crispy, but not burnt.

Once cooked, remove to a paper towel and let cool.  When cool, crumble the bacon.  Place in the freezer for at least 30 minutes.  This will insure crispiness in the burgers!

When you are ready to cook the burgers, preheat the oven to 450 degrees F.  Mix together the beef, bacon, and season with salt and pepper.  Mix well.  You can form into burgers with your hands if you want.  I wanted to make sure the burgers would be the same size as the biscuits, so I "rolled out" the meat mixture, and cut them out with the same cookie cutter I used to cut out the biscuits!

I got about 20 little burgers.

You can grill them if you want, cook on a skillet, however you would like.  I LOVE my broiler pan, so I used that.  I like that the grease drips down, and the burgers aren't sitting in it as they cook.  Fill the bottom with water, and spray the top with nonstick spray.

I cooked them for 15 minutes, then filled them over, and cooked another 15 minutes.  Then, I added cheese slices, and cooked them 10 minutes more.

Perfect!
