You know those days when you just want to snack? Nothing really sounds good? Except tortilla chips?
I love these chips! They are the Food Should Taste Good Sweet Potato Tortilla Chips. Even after we bought them, my husband says --- hmmm we should have gotten 2 bags! Lol!
This salsa is perfect with the chips. Veggies, beans, a little kick, what's not to love? And if you happen to eat half the bowl … not that I would do that … at least it is somewhat healthy, right?
I saw the cutest yellow cherry tomatoes at the store, and that is what I used in this salsa. You really could use any type of tomato.
Black Bean Salsa
Print this recipe!
2 cups diced tomatoes
1 green bell pepper, diced
1 jalapeno pepper, diced and seeds removed
1/2 cup cilantro, chopped
1 clove garlic, smashed and skin removed
1/2 tsp cumin
1 lime, juiced
2 cups cooked black beans, or one can, drained and rinsed
1/2 tsp salt, or to taste
In a food processor, pulse the tomatoes, bell pepper and jalapeno. Add in the cilantro, garlic, lime juice, salt, and cumin and pulse again. You can puree until it is smooth, or leave it chunky, whatever your preference is.
Add in 1/2 of the beans, and pulse again.
Remove from the food processor to a bowl, and stir in the rest of the beans.
Taste, and add more salt if needed.
Serve with tortilla chips or crackers!
Makes about 5 cups salsa
This was the perfect amount of heat for me. If you like it spicier, keep the jalapeno seeds in, or add another one!
